Peanut Butter Banana Mini Muffins

I mean, c'mon, who doesn't love a peanut butter and banana sandwich. Creamy goodness of both the banana and the nutty butter. I had some over ripe bananas from Christmas groceries, and found this recipe for muffins on my favorite lo-cal recipe website. Couldn't resist not trying them out!

PB & Banana Mini Muffins

Ingredients:

  • 3 over-ripe bananas, mashed
  • 1 1/4 cup all purpose flour
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 2 tbsp. butter, softened
  • 1/3 cup brown sugar
  • 1/2 tsp. vanilla
  • 2 egg whites
  • 1/2 cup peanut butter
Preheat oven to 325 degrees F, prepare mini muffin tin pan with baking spray or mini muffin cups.

Mix flour, baking soda, and salt in a medium bowl. Set aside.

Mix butter and sugar in electric mixing bowl until light and fluffy. Add eggs, bananas, vanilla, and peanut butter. Mix until thick at medium speed.

Add flour mixture and mix until just combined. Spoon into muffin tin and bake at 325 for 12-15 minutes.
