French Onion Soup

As you may have read on previous posts, I am not the biggest cheese fanatic. However, my basemate Kris is beyond cheese's biggest fan. We have been freezing this winter, and have been craving soup constantly. This is when we agreed upon the necessity of having french onion soup for dinner. Without further ado...

French Onion Soup


Ingredients:

  • 5 medium onions, thinly sliced
  • 3 garlic cloves, minced
  • 4 tbsp. butter
  • 2 tbsp. balsamic vinegar
  • 3 tbsp. flour
  • 64 oz. low-sodium beef stock
  • 2 tbsp. fresh thyme
  • 1/2 tsp. black pepper
  • 1/2 tsp. salt
  • 1 loaf french bread
  • Gruyere or Mozzarella cheese
Set your crock pot to high, then add onions, garlic, butter, salt, and balsamic. Mix until combined. Cover and let cook for 60 minutes, stirring occasionally. 

Add in flour, then stir thoroughly for 5 minutes. Add in beef stock, thyme, and pepper. Turn heat to low, cover and cook for 6-8 hours.

Before serving, cut bread into slices. Fill soup bowls to the top, then cover with slice of bread and a slice of cheese. Set under the broiler for 2-3 minutes, or until cheese is bubbly and golden brown. Be careful when serving, as bowls will be hot!
