Salmon with Basil Sauce

So it's almost October already. I can't decide if that is a good or a bad thing? All I know is that I am over the top excited for warming up the house with smells of home cooking, snuggling up in an old sweatshirt, and watching holiday themed movies (Home Alone 2 and Nightmare Before Christmas top my list). But amongst all of this love of home cooked food, and over sized sweatshirts, I have to make sure my waist doesn't turn over sized. So on tonight's menu I made sauteed salmon with a fresh basil sauce. A minimal amount of ingredients, but maximum taste.

Salmon with Basil Sauce


Ingredients:
  • 4 (6-ounce) salmon fillets
  • olive oil
  • salt and pepper
  • 1 cup fresh basil
  • 1/2 cup extra virgin olive oil
  • 1 garlic clove
  • 2 tsp. fresh lemon juice
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
Drizzle salmon with olive oil, and sprinkle with salt and pepper. Set aside for 10 minutes to absorb the flavor.

Combine basil, 1/2 cup oil, and remaining ingredients in a food processor. Pulse until finely chopped and set aside.

Heat a large non-stick skillet over medium-high heat. Saute salmon for 4 to 5 minutes on each side, or until desired degree of doneness. Place on serving plates. In the wamr skillet, heat reserved basil sauce and out over salmon.
