Chocolate Covered PB Filled Pretzels

Well that was a mouth full. Both figuratively and literally. The smoothness of peanut butter, the crunch of the pretzel, and the rich chocolate coating is hard to pass up. I used to make these for a very special person, and now I am ready to share this special, yet simple, snack. Pop a couple in your mouth here and there for a sweet and salty treat.

Peanut Butter Pretzels Dipped in Chocolate

Ingredients:

  • I cup peanut butter (crunchy or smooth)
  • 2 tbsp. unsalted butter, softened
  • 1/2 cup powdered sugar
  • 3/4 cup brown sugar
  • Bag of mini pretzels
  • 2 cups milk chocolate chips
  • Baking sheet covered in parchment paper
In a large bowl, mix the butter and peanut butter until smooth. Add sugars until combined and smooth. You should be able to roll the mixture into balls with your hands. If the  mixture is too sticky, add more powdered sugar, until you reach the desired consistency.

Roll mixture into small balls, about 1 teaspoon of mixture in each ball. Sandwich the ball between two pretzels and place on baking sheet. Once all pretzels have been formed, pop them into the freezer for 30 minutes.

Melt the chocolate in a double broiler, or in a microwave safe bowl. Dip each pretzel bite into the melted chocolate and place on the prepared baking sheet. Chill in the refrigerator until ready to serve. These melt quickly so store them in a air tight bag in the fridge or the freezer.
