Cookoo for Cake Pops

Do you ever long for the days of staying up all night with your closest girlfriends, easting sugary treats, and staying up way too late, fighting your hardest not to close your eyes in fear of falling asleep and missing even one second of the slumber party? Some girlfriends of mine and I decided to have an adult version of the age old slumber party, complete with an array of delicious baked goods, sangria, and some aptly named Ex-Boyfriend cocktails. I chose to make the ever popular cake pops for us to try. Suffice to say I have never made these before, but they were actually quite easy and even more fun to eat.

Cake Pops

Ingredients:
  • 1 box yellow cake mix (plus ingredients according to box)
  • 3/4 vanilla frosting
  • 1 bag melting chocolates
  • 1 bag melting white chocolate
  • Sucker sticks (found at your local crafts store)
  • Sprinkles for decoration
  • Styrofoam box
Cook cake according to the directions. Allow to cool completely at room temperature. When cooled, crumbled the cake into a large mixing bowl. Add frosting and mix until all cake crumbles have been taken up. 

Use cookie scooper (1 tbsp) to roll out balls. Melt 1/4 of melting chocolates in small glass bowl in microwave. Melt for 30 second intervals, mixing in between until completely melted. Stick one end of a sucker stick into the melting chocolate and then 3/4 way into the cake ball. When you are done it should look like this:
Place of a cookie sheet and let set in the freezer overnight. 

Melt the rest of the melting chocolates, keeping the white chocolate and regular chocolate separate. Dip the cake pops into chocolate, using a spoon to help guide the chocolate if needed. Decorate with sprinkles immediately Place the stick into styrofoam to keep upright, allowing the chocolate to dry. Once dry, you can use other colors of chocolate, frosting etc. to decorate.
