Pulled Pork Barbecue

I have Thursdays off of work, so that is always my day to make a feast for my family at home. This past Thursday I chose to make pulled pork sandwiches, homemade cole slaw, and fresh BBQ sauce (recipes to follow). And what is better than coming home to your house smelling like slow cooked pork in the crock pot? No mess, no fuss, and no added heat in the house from running the oven or stove all day. I slow cooked a 7.5 lb. pork shoulder, so we could have leftovers for a couple of days, but feel free to scale it down to your family's needs!

Pulled Pork Barbecue

Ingredients:
  • 1 (5 to 7 lb. pork roast, preferably shoulder or butt)
  • 1 onion, thinly sliced
  • 3 garlic cloves, peeled
  • 1 bottle of beer ( I used Coors Banquet)
  • Sweet dinner rolls
Dry Rub:
  • 3 tbsp. paprika
  • 1 tbsp. garlic powder
  • 1 tbsp. brown sugar
  • 1 tbsp. dry mustard
  • 3 tbsp. kosher salt
Mix the dry rub ingredients together in a small bowl. Rub the spice blend all over the pork. Cover and refrigerate for at least one hour, or up to overnight. 

Turn the crock pot on to the highest setting. Add beer, onion, and garlic. Place pork roast in crock pot and cook on high for 1 hour. Lower heat to low and slow cook for about 6 more hours. 

Move pork to large plate or pan and shred. Discard the cooking liquid. 
Serve on sweet dinner rolls, topping with BBQ sauce, cole slaw, or both. Enjoy!
