Orange You Glad You Made This Salmon

For the past 5 days I was having a ultra fabulous time in NYC eating, drinking, and shopping my time away with some old and new girlfriends. After a day of rest, and a full day back at the office I needed something simple, yet something decadent to eat for dinner. Though I am back in AZ I wanted to pretend to be enjoying mouth watering dishes from the city that never sleeps. This salmon encompasses all of this. 

Orange Glazed Salmon

Ingredients:

3 tbp Cajun Seasoning
1 tsp brown sugar
1/4 tsp kosher salt
4 boneless skinless salmon fillets
2 tbsp olive oil
1/4 cup Orange marmalade
1 tbsp lime juice

Combine cajun seasoning, sugar, and salt in a small bowl. Rub all over surfaces of fillets. 

Saute fillets in oil in a large non-stick skillet over medium-high heat for 3-4 minutes. Turn and saute an additional 2-3 minutes. 

Blend marmalade and lime juice; swirl in skillet until melted. Carefully turn fish to glaze on all sides. The salmon is done when it begins to flake when tested with a fork.

Serve.

The glaze carmelizes on the salmon, making a sweet crust, yet the cajun seasoning has just enough kick. The flavors really compliment each other. This recipe is made for 4 people, but you can easily cut it down and prepare for a single salmon filet like I did. Dig in!
