Fig, Caramelized Onion, and Turkey Sausage Pizza


AAhhh pizza. It's a beautiful thing, isn't it? It's literally the one dish that can be made to anyone's likings or standards. Vegetarians can load pizza up with fresh garden picks, meat lovers have a large selection of Pepperoni's, salamis, sausages, etc. to choose from. Heck, there's even dessert pizza!  Are you gluten free and can't have regular pizza crust? Well, Williams Sonoma makes a gluten free crust mix, used and pictured here. And it tastes surprisingly good! I have zero complaints about it, and look forward to cooking gluten free crusts again in the future! This pizza was both sweet and savory. Sweet from the fig preserves and carmelized onion, savory from the turkey sausage, and just good, cheesy, deliciousness all around.


Fig, Caramelized Onion, and Turkey Sausage Pizza

Ingredients:
  • 1 pre-made pizza dough ball (I used Williams Sonoma gluten-free dough mix)
  • 2 tbsp. corn meal
  • 1 tbsp. olive oil
  • 1 cup jarred fig preserved
  • 1/2 tbsp. coconut oil
  • 1 large sweet onion, thinly sliced
  • 1 tbsp. brown sugar
  • 2 Turkey sausages, cooked through, and thinly sliced
  • 1-2 cups shredded mozarella cheese, depending on your desired cheese factor
  • chopped fresh parsley for garnish
Preheat oven to 400 degrees.


Heat coconut oil over medium heat in a medium saute pan and add the onions and brown sugar. Let the onion carmelize, stirring occasioanlly until dark brown and soft, about 30 minutes. 


Meanwhile, roll out the pizza dough to form a large circle on a floured surface. Sprinkle corn meal on a baking sheet or pizza stone. Top with the pizza dough. Poke pizza dough with fork all over, then brush lightly with olive oil.

Bake in the oven for 12 minutes so that the crust can begin to rise and crisp up, this way you will keep a sturdy crust, and won't get soggy from the fig preserves.

Remove pizza dough from the oven and spread with fig preserves. Sprinkle half of your cheese over figs. Then top with carmelized onions. Evenly place turkey sausage slices around pizza. Top with the remaining cheese.


Bake in the oven for 18-20 more minutes until the cheese in completely melted, and the crust is browned. Sprinkle chopped parsley over the top. Let cool for 5-10 minutes before slicing and serving.
