Creamy Mashed Cauliflower

If given the choice I would eat mashed potatoes for breakfast, lunch, dinner, afternoon snack, midnight snack...you get the idea. Besides the fact that I would be in a constant food coma if I did such a thing, I would probably turn into a potato myself, and that doesn't sound very attractive. I found a great alternative using steamed cauliflower, where you can adjust the taste as necessary and you still get to enjoy the creamy comfort food without turning into a spud yourself.

This recipe is only 60 calories for each 3/4 cup serving with 3.7g protein, 8.6g carbs, 4.2g fiber, and only 2.4g fat.

Creamy Cauliflower

Ingredients:
  • 1 head caulflower, florets cut
  • 4 cloves, crushed garlic
  • 1/3 cup plain greek yogurt (can use 1% buttermilk or low-fat sour cream as a substitute)
  • Salt & Pepper to taste
  • 1 tbsp. butter or margarine
Steam or boil the caulflower florets and garlic cloves until soft. Drain well. Add the yogurt, salt, pepper, and puree until smooth with a hand blender or blender.

Add a pad of butter on top and adjust salt and pepper as necessary.
